Better than balsamic vinaigrette
<p>In a bowl combine: </p> <p>1/2 medium red onion, diced finely</p> <p>4 Tbsp Basalmic vinegar</p> <p>2 Tbsp EVOO</p> <p>1 avocado mashed</p> <p>salt, pepper to taste. </p> <p>*Add halved cherry tomatoes if desired.</p> <p>Let sit at least 15 mins to chill and marinate prior to serving in refrigerator.</p> <p>Mix with fresh spring mix (1/2 tub of Costco size), serves 4. </p> <p> </p>
